Papa Sam’s Pizza Sauce
1 ea. 10 ounce can of tomato puree
1 ea. 2 ounce tomato paste
1/2 cup water
2 tablespoon brown sugar
2 teaspoon olive oil
2 teaspoon butter
1/4 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder or better 2 cloves smoked garlic
1. Combine ingredients in a saucepan over medium heat. Bring to a boil.
2. Reduce heat and simmer for 30 minutes.
Makes 2 cup.
Sams Famous Buffalo Wings Sauce
2 tablespoon olive oil
1/2 teaspoon black pepper
2 tablespoons white vinegar
1/4 teaspoon cayenne pepper
1/4 teaspoon Chile pepper
1 clove smoked garlic minced
1 teaspoon lemon pepper
6 tablespoons Louisiana hot sauce
8 tablespoons unsalted butter or margarine
1/2 teaspoon BBQ Spice Mix
1/4 teaspoon Key Lime Jerk Spice Mix
1/2 cup non-sweet bbq sauce
1/8 cup water
Combine ingredients in a saucepan over medium heat. Bring to a boil.
Reduce heat and simmer for 10 minutes.
Papa Sams Shrimp Scampi Sauce
2 tablespoons lemon juice
1 teaspoon black pepper
1 teaspoon lemon pepper
2 smoked garlic cloves
1 teaspoon finely chopped sweet onions
2-3 pounds shrimp (shelled uncooked)
1/2 stick butter
1/2 teaspoon cayenne pepper
3 tablespoons of olive oil
3–5 tablespoon Louisiana hot sauce
3/4 cup bbq sauce not sweet—good stuff

How to Make Smoked Garlic
Smoking Garlic Gloves
Peel your garlic cloves
Start your grill. Place the cloves of garlic on a roasting
grilling plate on your grill. Install the smoker pro as instructed on 3-4 of this cookbook.
With the smoke pouring out of your grill. Smoke the garlic
just until it turns light brown approx. 10 minutes.
At 250 degrees F. Enjoy!
Spicy Fish /Chicken Marinade/Basting Sauce:
1/2 c. Zesty Italian salad dressing
1/4 tsp. Louisiana hot sauce
1/4 tsp. crushed red pepper
1 clove crushed garlic (smoked)
1/4 cup lemon juice
1/4 cup wine or vinegar
Place contents into small saucepan. Bring to boil, stirring continuously. Simmer 5 minutes.
Great basting sauce for chicken while barbecuing or as a marinade by placing mixture in baking dish and soaking chicken for 30 minute.
This is an great marinade for fish Tuna etc as well
Spicy Chicken Marinade # 1 :
1 cup soy sauce
1/4 cup lemon juice
1/4 cup sweet wine
2 garlic clove—use the smoked garlic
1 tablespoon of ginger
4 tablespoons olive oil
1 tablespoon crushed red pepper
Liquefy in a blender place
Place chicken in marinate in a zip lock bag
Let the chicken marinate 1 hour in Refrigerator
Spicy Chicken Marinade # 2:
3/4 cup of your favorite BBQ sauce.
1/2 cup soy sauce
6 jalapeno peppers liquefy in a blender with 1/4 cup vinegar
Place chicken in marinate in a zip lock bag
Let the chicken marinate 2-4 hours in Refrigerator

8 tablespoons of Louisiana hot sauce
1 teaspoon of cayenne pepper
1 teaspoon crushed read pepper
2 tablespoon of lemon juice
1 15 oz can of tomato sauce
1 can of coke
1 6 oz can of tomato paste
1 teaspoon lemon pepper
1/2 teaspoon black pepper
1 teaspoon of season all salt
1 small finely diced or minced onion
2 each garlic cloves pressed (used smoked ones)
4 tablespoon Worcestershire sauce
1/4 cup apple cider vinegar
1. Combine ingredients in a pot over medium heat. Bring to a boil.
2. Reduce heat to medium stir often 20-30 minutes.
3. Reduce heat and simmer for 20-30 minutes. Until the sauce thickens
Makes 4-5 cups

Tangy, Sweet & Spicy with the a Zap of Mustard
8 tablespoons of Louisiana hot sauce
12 tablespoon Honey
1/2 cup brown sugar
1/4 cup yellow mustard
1 teaspoon of cayenne pepper
1 teaspoon crushed red pepper
2 tablespoon of lemon juice
1 15 oz can of tomato sauce
1 can of coke
1 6 oz can of tomato paste
1 teaspoon lemon pepper
1 teaspoon black pepper
1 teaspoon of season all salt
1 small finely diced or minced onion
